I’m down again today! The scale said that I weighed 339.7 lbs., which is the first time that I’ve been below 340 lbs.! I’ve lost 1.3 lbs. since yesterday, and 7.9 lbs. since I started the diet last Sunday.
I thought I would try something a bit different today. I’m always looking for new sauces and dressings as such since they can really help to make just plain old potatoes so much better. I found this vegan gravy on Amazon that I thought I would give a try. I combined this with some “air fryer” fries, and nutritional yeast to come up with a homemade version of poutine (see photo to the right). Pretty good overall, but next time I would cook the fries a bit longer and make sure to wash the starch off the freshly cut potatoes. I think the starch on the potatoes is preventing them from having that great “crunch” that I love so much.
So, in terms of my eating plan today, I had:
- Potato and corn cake in the frying pan. This frying pan was a bit sticky for some reason, so the pancake didn’t come out as well as I had hoped.
- Grapes for dessert.
- Two low-cal burrito wraps. The contents were potatoes, kale, homemade hummus, and hot sauce.
- For dinner this evening I had the poutine that I mentioned earlier in this article (see photo to the right).
- A mug of coffee with the remainder of the “oat milk” that I bought the other day.
Let’s see what the scale says tomorrow morning.
