I’m turning over a new leaf this morning and back to “healthy eating”… This morning the scale said that I weighed 337.7 lbs., which means I’m up 0.4 lbs. since yesterday, and down 9.9 lbs. overall.
The photo to the right shows the “fixins” that I threw into the Instant Pot, just before I popped on the lid and set the timer to “rice”. If you look closely you can see the chili powder on the top. There were kidney beans, celery, diced tomatoes, lentils, carrots, mushrooms, and oh, of course potatoes…the star of the show. Sure makes a hearty meal!
I didn’t start eating till after noon, but once I started… Here’s what I had today.
- Vegetable stew with two slices of Aldi Keto bread, PB2, and sugar-free jam.
- Diet cola.
