I got up late this morning and had to run errands, so I not only skipped breakfast, I didn’t get a chance to weigh myself until this afternoon. When I did, the scale beamed back 345.90 lbs. (see photo to the left), which means that I have lost another 0.6 lbs. since yesterday. It seems that what I’m doing is working as the weight seems to be going down and down.
I thought that I would “speed up” the weight loss a bit by making some vegetable soup. I used two liters of vegetable stock, and added cabbage, tomatoes, beans, potatoes, peppers, and spices (see photo to the right). I put this on “low heat” on the stove, so it wasn’t ready to eat for hours…
While the soup was cooking I decided that I would have potatoes with some vegetarian chili (see photo to the left). I’m not sure what it is about chili, but even the vegetarian version sure adds a lot of. I’m also into pickles as well, as you can also tell from the photo. They are very low cal and add that nice salty taste to almost any meal.
This potatoes & chili was so tasty that I had multiple bowls of the stuff!!! I ate so much in fact that I had to lie down for a nap. I probably had too much… 🙂 Let’s see how the scale responds to this tomorrow. On the positive side, it’s oil-free and plant based, so it’s not like it’s loaded with oil and cheese and all the other high caloric food items. On the other side of the coin, I did eat a lot… Let’s see how the scale responds tomorrow.
Later this evening I had a couple of bananas and a large mug of coffee with oat milk.
